DESCRIPTION: The grapes come from various vineyards in the southern Marlborough Dales and central Wairau Lowlands (particularly in Woodbourne, Renwick and Rapaura). Harvested by machine and partly by hand, the grapes are placed in 500 kilo bins, which are decanted directly into the tank presses. The grapes were lightly pressed and the juice obtained is decanted into mostly old French oak barriques. The must was subjected to spontaneous fermentation with indigenous yeasts, for well over 6 months. It is then left on the fine lees for another eight months before being bottled.
