DESCRIPTION: The delicate pressing respects the berry, the division of the juice guarantees a high quality must. Cold decantation followed by fermentation at a controlled temperature preserves the personality of the wine, in particular the aromas. This cuvée represents the first approach to the world of sulphite-free, trying to propose the natural expression of the wine. After the prize de mousse in the bottle, the wine rests in the bottle for 18 months on wooden slats which keep the bottle in a horizontal position. This refinement gives the wine great elegance and the minimum dosage scrupulously preserves its character; the wine obtained is a Crémant representative of its terroir. Yellow wine with green and golden reflections and delicate bubbles. The nose opens with white flowers and citrus fruits, then developing notes of butter and brioche. Full and round on the palate with a nice liveliness, nice complexity in the secondary aromas. The harmony and elegance of Perle d'Ivoire create a perfect combination for pairing with a wide variety of dishes, from the simplest to the most elaborate (vegetables, seafood, oysters, white meat...).
