DESCRIPTION: The grapes, harvested by hand making them chosen and dangling as per tradition, are hung in the company's ancient drying room for a period of 4-5 months. At the end of the drying process the grapes are selected again and then pressed. The must obtained is introduced into chestnut and oak barrels with a capacity of 30 to 100 liters, where it is left to ferment and mature for a period of 5 to 7 years. A period of about 2 years in glass follows before bottling.
