DESCRIPTION: The harvest is done by hand, in crates, when the grapes have reached optimal ripeness. The grapes arrived in the cellar are de-stemmed and cooled to a temperature of 7-8 degrees. Softly pressed by means of a pneumatic press; the must obtained is placed in a steel tank for 12 hours at controlled temperature to clear itself.
Transferred it is fermented at a controlled temperature of 18-20 ° C.
Cooled and filtered it is left for a short time in the tank and immediately bottled. It presents the nose with fine and refined aromas ranging from ripe fruit (golden apple), tobacco and sage. Round, structured and with character on the palate where it releases great elegance and persistence.
Ideal with grilled fish, white meats and stewed veal.
