For the ninth edition, Drouin went to Scotland, the historic home of single malts, turning to the Arran distillery, with which for twenty years there has been a relationship based on mutual respect and exchanges of barrels. For the production of this release, a 13-year-old calvados from Pays d'Auge was chosen, aged for 6 months in 6 old French oak barrels that previously contained Arran whisky. The result is a delicate calvados, with nuances of apple, malt, apricot and pear. On the palate it achieves a perfect balance between roundness and acidity, with a finish that brings with it notes of hazelnut and cereals...

The relationship with Springbank is not new, as the distillery has been using its calvados casks to age some of its whiskies for twenty years now. The challenge for this new edition was to marry the apple notes with the peaty character of the Springbank casks. For this, a 19-year-old Calvados Pays d'Auge of great depth was selected. Calvados Hors D'Age is born like all Drouin calvados: harvesting of the 30 varieties of sour, sweet, bitter-sour and bitter-sweet apples, and reaching maturity; soft pressing in champagne style, with yields reduced to 65% to preserve the maximum fragrance and freshness of the juice; spontaneous fermentations with indigenous yeasts. The fact of using barrels that have previously contained other wines and spirits has a very important influence on Drouin Calvados. If the normal share of angels in Normandy is 2% per year, that of Maison Drouin reaches even 4% per year, making Drouin Calvados much more complex than average...

In 2020, following Guillaume Drouin's request, Luca finds six empty barrels of 1996 Caroni rum, which are delivered to the Daniel Flambard winery in Pont l'Evêque, and filled with a 17-year-old Calvados. The calvados obtained after a maturation of 8 months in these barrels is powerful and rich, while retaining its freshness and liveliness...

For its production the disciplinary of Calvados AOC is followed - the rest of the production of Drouin belongs to the restrictive disciplinary of Calvados Pays D'auge -, similar to that of Calvados Domfrontais. Selection is produced from 60/70% of apples of the 30 cider varieties and 30/40% of pears, which give a very pleasant fruity note. Aging lasts a maximum of 2 years, to maintain all the freshness of the fruit...

The apples are carefully selected and washed and then crushed before a period of rest, a crucial moment to fix the color of the cider and soften its tannins. The crushed apples are subjected to a soft pressing in Champenois style, followed by spontaneous fermentation with the indigenous yeasts of the Drouin family caves, a slow fermentation that benefits from the cold hellish days.
