DESCRIPTION: Raw material: wines produced from Schiava and Lagarino grapes, the latter variety which is now harvested only in the upper Valle di Cembra and gives a wine whose main characteristics are moderate alcohol content and high acidity, essential prerogatives for obtaining a high quality final distillate. Both the Schiava (red fruit) and the Lagarino (white fruit) they are vinified without the peel. After the pressing the must after static decantation, it goes to fermentation. Once the sugars have been processed into alcohol (about 8 degrees), the wine remains on its lees until the moment of distillation. Distillation: from the two wines, distilled separately in the same year with alembic discontinuous in bain-marie, two spirits are obtained (70 - 75 degrees alcohol). Bottling: after 10 years in 225 liter oak barrels and another 3 -5 years in stainless steel it goes to the dilution with source water at 45 ° and subsequent filtration a temperature close to zero.
