DESCRIPTION: Manual harvesting in small crates with UV selection. After destemming, 30-day maceration for Grenache and Syrah, with daily pumping over. Carbonic maceration for Carignan for 25 days. Temperature-controlled fermentation. This is a wine of character and generosity. Notes of cilium, blackberry, and wild berries are evident on the palate. On the palate, it is a wine with a beautiful balance of structure, power, and acidity. Velvety tannins. Ideal with pigeon with pepper and cocoa or with a beef steak flambéed on a bed of pepperoni.
