MANUFACTURER: Foursquare Distillery ALCOHOL : 61 CONTENT : 0,70 l DESCRIPTION: In January 2019, the Foursquare distillery acquired ten barrels from cognac producer Camus. Ten barrels from their Caribbean Expedition Cognac program. After a year the barrels were emptied and the cognac was sent back to France. The barrels were then filled with 2008 vintage rum and 12-year-old ex-bourbon barrel rum. The rum was then matured for another two years. The maturation didn't stop there, the rum was then blended with another rum aged 14 years. A double maturation of which 5 years in ex-bourbon barrels followed by a further 9 years in ex-cognac barrels. As usual, Foursquare blends the light rums from the distillation column with the heavier rums distilled via their still. This rum is bottled at 61%..

PRODUCER: Barbosa Amado & Vicente NATION: Capo Verde ALCOHOL: 45 CONTENT: 0.70 l DESCRIPTION: Grogue Barbosa Amado & Vicente is produced with a precise variety of Cape Verde cane, with a fresh and natural juice, with 16/18 brix. Fermentation takes place in steel containers of 500 liters and 1000 liters and begins with a 'piè de Cuba' of 200/250 liters of juice, in 1000-liter containers, to which a further 200 liters are added. The first fermentation lasts about 10 days and the following, on average, six days. No added water. The distillation takes place in 350 liter copper stills, fueled by direct wood fire. The "cotta" lasts 4/5 hours and, after cutting the heads and tails, 45/50 liters of grogue remain at 45 °.
