Waimaunga Sauvignon Blanc 2021

DESCRIPTION: Vinification: gentle pressing. Fermentation in stainless steel for 85% and for the remaining 15% in old French and Austrian oak barrels (600L). The wine was then aged on the lees for 8 months with stirring of the fine lees, followed by a further 6 months of aging in tanks and barrels to guarantee the balance of the wine before bottling. Organoleptic characteristics: View: straw yellow with delicate greenish reflections. Smell: fresh citrus notes with hints of honeysuckle. Taste: Aromas of lemon and lime zest are balanced by a lingering minerality, topped by a hint of gooseberry on the finish.Pairings: Perfect to serve with a selection of goat cheeses.
