The grapes are collected in small ventilated cassettes, then carefully selected by groups of 10 people working at a table. The grapes are then totally diraspated but not pressed (the grapes remain whole) and then transferred to a tin by gravity. The maceration takes about 3 weeks, with more or less frequent sinking of the hat with the feet. In order not to alter a so valuable terroir, no oenological products such as ferments, enzymes or tannins are added. This wine is aged in barriques for 16/18 months, using a fairly low proportion of new wood (less than 20%). Finally, it is bottled with a very light filtration.
