DESCRIPTION: The grapes were pressed in a soft press, with yields per ton of fresh grapes less than 600 liters of freshly pressed must. Immediately after pressing, it is placed with the skins in 300-liter French oak barrels, adding 30 liters to each barrel every day, so that the yeasts consume all the sugars daily and the wine is completely dry at the end of the process. After several harvests with the appearance of the veil in some barrels, 30 French oak barrels with up to 100% Pedro Ximénez wine, aged under the “velo de flor” and recognized by the D.O. Jerez, are available. During the autumn of 2015 and the spring of 2016, the different barrels that randomly evolved with this process, began to be clarified according to their quality in static aging and without following the criteria of criaderas and soleras. For the present "saca" or extraction of the wine from the barrels before bottling, 9 full barrels were selected, which were filled up to 220 liters to leave room for the oxygen necessary for the live flor yeasts, and a 400-liter export barrel of Jerez in American oak. From the bright straw gold color, by rotating the glass, dense glyceric tears emerge, typical of natural fermentation and contact with the skins. Notes of yeast, dry wood, hay, as well as the presence of a "veil of natural flowers" can be perceived. French oak predominates over American oak, but neither is the protagonist in a perfect marriage. On the palate there is a surprising lack of alcoholic sensation despite its 15 degrees. It is light and unctuous at the same time. The acidity is extremely unusual for a Vino Fino. Dried fruit and flavor are maintained until the end, enhancing the interaction of all the taste buds, and giving an infinite persistence. Serve in large glasses. In optimal conditions, it can last more than 15 years from the bottling date.
