DESCRIPTION: The ruin of the Casanova castle, reported for the first time in a document of 1206, stands majestically at the gates of Terlano. Equally impressive and complex is our noble blend of Pinot Blanc, Chardonnay and Sauvignon blanc. This classic Terlaner follows all the qualities of its production area, and presents itself as a vigorous wine, rich in facets and embellished with mineral notes. It fully expresses its full potential only after many years of aging in the bottle. Harvest and selection of manual grapes. Delicate crushing in whole bunch and pickling for natural sedimentation. Slow temperature controlled fermentation in large wooden barrels (30 hl). Partial malolactic fermentation (only for Pinot bianco and Chardonnay grapes), and aging for 12 months on fine yeasts in large wooden barrels. Assembly three months before bottling. It goes well with caviar, grilled salmon steak or tuna roast, but also a Florentine, Roman saltimbocca or braised veal shank, eggplant parmigiana or truffle fondue.
