DESCRIPTION: After the success recorded with Prosecco extra dry sparkling wine, the company "La costa" wanted to propose the sparkling wine in a new, more refined and elegant version: the "vintage" Brut, with an internal sugar content of 15 g / L. This is produced exclusively with vintage grapes, indicated on the label, in thousandths. The grapes used must be of high quality to allow the achievement of excellent quality characteristics of the finished product.
The grape harvest takes place slightly earlier than full maturity since the alcohol content of the base wine does not exceed 10.5 ° alcohol. The grapes arrived in the cellar are de-stemmed and cooled to a temperature of 7-8 ° C. Pressed softly by means of a pneumatic press, and the must obtained is placed in a steel tank for 12 hours at controlled temperature to clear itself. Transferred it is fermented at a controlled temperature of 18-20 ° C.
By means of constant and accurate checks, it is assessed whether it needs further decanting or other cellar operations.
