DESCRIPTION: Grapes are harvested and placed in small boxes
to wither until the typical notes of withering are fully breathed.
The choice of slightly withering the grapes does not come
from the need to increase the concentration of sugar, already significant by virtue of the very low yields that this grape naturally expresses at Prendina, but precisely to take advantage of the specific notes that the grape develops during withering. This gives it unique and special characteristics to this wine which, after a traditional fermentation in red with 12/14 days of maceration, is drawn off and after malolactic fermentation is placed in new barriques and second passage where it remains for 18 months until completely ripe. Sometimes in particularly rich years of sugar together with merlot obtained from dried grapes, merlot is also used, obtained from fresh grapes to reduce the alcohol content of Faial.
