DESCRIPTION: The grapes are cultivated on a parcel of two hectares adjacent to "Les Rouillères", separate from this only by a path. On two twin soils it was intended to verify and compare the quality, evolution and potential of two different vines. Cabernet Sauvignon is caught late in comparison with other grapes, made it more moderate and requires strict selections and patience to get the most out of it. The ground is gravel / sandy, planting density 5000 feet per hectare. The grapes are seen in the cellar in two steps, discarding the unfinished ones; Followed by cold maceration before fermentation takes place in stainless steel at controlled temperature. The wine rests in steel for 4 months with natural cold stabilization.
