DESCRIPTION: After careful selection in the vineyard, the grapes, harvested manually and arranged in small boxes, are prepared to dry for about 3 months in our fruit stand, where temperature and humidity are strictly controlled. During vinification, cold maceration is prolonged for five days. The contact with the skins facilitates the extraction of primary aroma and body. The malolactic fermentation takes place rapidly, and the wine can then be aged in French barriques for around 2 years. A subsequent 12-month refinement is carried out before being put on the market. Dark ruby red with garnet edges. Strong notes of plum and black cherry, clove, black pepper in grains. On the palate the wine is velvety, rich in fruity notes. The finish is balanced between sweetness and flavor. Ideal with white meat dishes, grilled meat, American bbq. Spicy Asian cuisine. Aged and blue cheeses.
