DESCRIPTION: The yield is limited, from 5,500 kg of grapes, 3000 liters of Chardonnay must are obtained. The fermentation takes place only in steel vats for almost three weeks, at the end the wine is left to rest on the fine yeasts. The cuvée is created at the end of winter with wines strictly from a single harvest. The fermentation takes place in the stacked bottles and is completed with a long maturation for 5 years. The remuage is manual on wooden pupitres with dégorgement à la glace. Bianc 'd Bianc is a Alta Langa with a particularly low dosage. The amount of sugar limited to 8 grams makes it a sparkling wine of contemporary style, rigorous and seductive. Complex aromas of white and light apricot fruits, the taste has volume and a long substance with a delicate and enveloping effervescence through which the notes of white chocolate and sweet fruit can be heard.
