DESCRIPTION: In 1729, Don Diego de Alvear y Escalera founded Montilla Alvear is the oldest winery in Andalusia. The eight generations that have followed have contributed to its modernization in terms of technology and the preservation and enhancement of the variety Pedro Ximénez. The method "criaderas y soleras" is a system for aging consisting in arranging the barrels of superimposed rows, starting to fill only the barrels higher; after one year, part of the content is decanted into barrels that are located at the lower level and the upper ones are filled with the new wine and the process is repeated from year to year. The wine that is located in the barrels at the base is intended to be bottled and is composed of different vintages. The year indicated on the label is the initial one.
