DESCRIPTION:Two hectares of vineyards, average age of 25, lying on the land formed by the last glaciations, immersed in the warm brightness typical of the Tuscan coast and in the cool climate of the Apennines. Grapes picked by hand in crates, pressed directly except for Vermentino which, after being de-stemmed, undergoes a short maceration; 2/3 days to extract all the juice from the consistent pulp, then pressed and fermented in steel. 10% ferment in wood, a small batch useful to round off the edges of the steel. After a short period of time on the lees a decanting and possibly a clarification with a light dose of bentonite. After 6 months the wine is ready for bottling.
