DESCRIPTION: Early harvest in November, strictly manual, in boxes of 18 kg at most, no more than three days of stopping from harvesting to cold pressing in continuous: these are the rules, strictly observed, of the Tenuta di Valgiano. Thus, the 3000 olive trees of the farm give a low acidity oil with a characteristic tangy taste, fruity on the palate, but with notes of almost floral delicacy. An oil to drink, of great harmony. At the Tenuta di Valgiano, moreover, the experience of centuries has selected the best varieties to produce a gentle and intense oil: 80% olive oil mill, to which is added a spicy of ancient varieties, almost on the verge of extinction, which characterize the oil with unique aromatic notes of thistle and artichoke. It is sold in simple dark glass bottles, without a label, with the farm's indications elegantly silk-screened on glass. Ideal consumption within 18 months of production.
