DESCRIPTION: After de-stemming the alcoholic fermentation takes place thanks to inoculation of selected yeasts while maintaining the temperature constantly around 25 °. Macerated are made at regular intervals pumping thus promoting the contact of the skins with the must to increase the extraction of tannins, anthocyanins and aromas characteristic of Nebbiolo. It follows the racking to separate the wine from the skins. Intense ruby red color when young, tending to garnet red after aging. We notice a large olfactory range derived from the typical aromas of rose vine, red fruit, vanilla and spices gently evolved through contact with wood. The palate confirms the aromas detected by smell. The taste of red fruit blends perfectly with the delicate flavor of the wood. At the table perfectly combines the great dishes of Piedmont cuisine, meat, braised meat, game, mature cheeses.
