DESCRIPTION: Vinification: in red with controlled temperature maceration. The froth, extremely slow, is by natural refermentation charmat method. Aging: in stainless steel. Appearance: dry sparkling red. Smell: ample and persistent, with hints of red fruit and spices. Palate: the taste is dry, fruity and pleasantly tannic. Pairings: ideal with the dishes of the Emilian cuisine, in particular the typical cold cuts and the tagliatelle with meat sauce. Perfect with roasts.
