DESCRIPTION: Unique product in the enological landscape of Veneto, the Vin Santo of Gambellara begins its journey with the choice of the best bunches of Garganega, follows the withering with the traditional system of "picai", and finally the manual pressing during Holy Week. Aging in 18-month-old oak barrels completes the work. Wine is often compared to a nectar due to its complexity and warm enveloping. A unique experience. A wine that knows how to excite. According to the ancient tradition, the grapes are left to dry with the "picai" system. The bunches are twisted with one string and "appiccati" (in the dialect "picà") to the ceiling: hence the name of this withering system. The manual pressing takes place traditionally during the Easter Holy Week. Hence the name "Vin Santo". The must is fermented for a year and then a mature for a further 3 years in small 228 l oak barrels. Bottling not before 4 years and subsequent refinement in the bottle. Amber color, the nose is wide and concentrated, with notes of fig jam and dried fruit toasted. In the mouth it is intense, creamy, harmonious and of very long persistence. Excellent with dry pastries, it is also very well expressed by alone, as a meditation wine
