GRAPES: 100% Chardonnay
DESCRIPTION: Harvest: second half of August. Vinification: in white, in steel barrels through selected yeasts at a controlled temperature. Aging: from August to late May in stainless steel tanks, then aging on the lees in the bottle until disgorgement, at least 30 months, up to 48 months. Appearance: white. Straw yellow with greenish reflections, fine, soft and persistent perlage. Smell: traditional, classic, rich and intense scent with ample hints of bread yeast and oven waffle, ripe fruit and vanilla on a delicate mineral background. Palate: full and velvety flavor, full and persistent, with pleasant acidity and at the same time of persuasive elegance. Pairings: as an aperitif and throughout the meal.
