DESCRIPTION: Wine made from grapes of Chardonnay , a grape of French origin in the eastern hills of Friuli , where it is cultivated since 1800 , has found an ideal environment able to provide quality products . The harvest is manual, with specially educated and skilled labor force , since the second half of the month of September with selection of the best grapes in the field and promptly transfer to the cellar. The wine is made in white , that is, without the skins , with soft pressing at low temperature under an inert cover to protect the potential quality of the grapes from oxidation . Fermentation at low temperature ( 15-18 ° C) to encourage the development and preservation of the most distinctive varietal aromas . It is aged in oak barrels (10%) and in stainless steel tanks (90% ), avoiding the clarification of wine with continuous agitation of the fine lees . The wine remains "sur lies" until bottling . The aging period continues in the bottle , stocked horizontally in underground cellars for at least four weeks prior to labeling. The color is straw yellow , bright , with greenish reflections. Bouquet with pleasing and refined aromas that recall the soft white fruits , exotic fruits , white flowers and crusty bread. The taste is full and warm inviting with a low acidity which further enhances the softness . Great balance and long aftertaste . He reached the peak of the expression of the grape in the first two years and then smartly evolve for a time that can safely exceed four years. Excellent as an aperitif or paired with light hors d'oeuvres , soups and pasta dishes to seafood and soft cheeses
