DESCRIPTION: The specification does not allow the use of Nebbiolo. Notes on Vespolina: it is an indigenous grape, Piedmont, traditionally considered improver and therefore assembled with the Nebbiolo to soften the tannins, enhance the fruity notes and turn the color. The name may derive from both the elongated shape of the berry, reminiscent of the subtle body of wasps, and by the fact that the grape proves particularly welcome in these insects. We know that it is a first degree relative of Nebbiolo but the DNA has not yet confirmed who the father is and who his son. On the other hand, we know it contains a remarkable concentration of Rotundone, the sesquiterpene himself who gives the Syrah typical hint of black pepper. In cooler climates, just as in Boca, this spicy component is even more appreciable. Production area: Alto Piedmont, at the foot of Monte Rosa, the left bank of the river Sesia, municipality of Boca, the late area of Novara Hills. Terrain: hilly between 300 and 450 meters s.l.m., supervulcanica and glacial presence of granites, volcanics, acidic soil, very draining, infertile. Noteworthy are the outcrops of volcanic bedrock that can be seen in the Montalbano area and Traversagna. Boca is in the territory of the Supervolcano caldera of the Sesia Valley, from 2013 UNESCO recognized site especially for the unique geological complexity in the world that is found in these soils. Also it is in the heart of Monte Fenera Natural Park, where there was the sensational discovery of wild vines (vitissylvestris) ancient that - in addition to being a historical record - are of great international interest in the preservation of grapevine germplasm. Training system: espalier Guyot Yield: 52 hectoliters per hectare. Harvest: the first ten days of October. Type of Harvest: manual harvesting. Ageing: the beginning of the year following the harvest, the Boca aged for 24 months in barrels of various capacities whose very light roasting allows the Nebbiolo to express the most typical varietal characteristics of the territory of Piedmont. The aging continues for at least another 12 months in bottle.
