DESCRIPTION: After destemming the must is matured with the skins at a controlled temperature for 1-2 days to extract color. This is followed by the racking to separate the skins from the must so as to continue the fermentation in an autoclave thanks to which is retained part of the product gas thus generating the characteristic perlage. Fermentation, selected yeasts, takes place at a controlled temperature and lasts for about two weeks. Ruby red with tinges pink; a fragrant and aromatic, with clear hints of raspberries, cherries and strawberries; Delicately sweet, fruity but not cloying thanks to the acidity well balanced with residual sugar.It goes well with pastries and desserts made with fruit, cream and chocolate. A very pleasant aperitif and thirst-quencher at any time of the day
