GRAPES: Corvina, Rondinella, Molinara
DESCRIPTION: VHarvest: second decade of October. Vinification: after harvesting, the grapes are carefully selected and then placed in wooden boxes in well ventilated areas for drying which lasts about 3-4 months. Then followed by pressing, maceration on the skins for about 15-20 days at a temperature of 23-25 ° C and finally fermentation. Aging: 36 months in Slavonian oak barrels; after bottling it rests for 6 months in the bottle. Appearance: ruby red-intense garnet. Smell: notes of intense licorice, aromatic herbs, raspberry jam. Palate: endowed with a beautiful structure it is warm, pulpy, tasty and with a long and coherent finish. Pairings: red meats, roasts and aged cheeses.
