DESCRIPTION: The vineyards of Sancerre are located about 200 km south of Paris in a hilly area with altitude from 200 to 400 meters. The Domaine Pascal Jolivet owns about 30 hectares of vineyards in the municipalities of Bué, Verdigny and Sainte-Gemme. The Loire River and the surrounding forest create a good microclimate for the vines:
• Les Caillottes, calcareous soil and located Bué-en-Sancerre
• Les Terres Blanches, soil clay and limestone
• Silex, from the stony soil rich in silicon.
This wine is made from vines that cover about 3.5 hectares oriented full south and found to Bué-en-Sancerre, in the area called La Plante des Pres, one of the best terroirs of Sancerre. The vines are more than forty years. The vines of over forty years in full ownership have very low yields. The grapes are selected by hand and fermentation takes place with indigenous yeasts at controlled temperatures.
