DESCRIPTION:Twelve hectares of vineyards, average age of 15 years, lying on the land formed by the last glaciations, immersed in the warm brightness typical of the Tuscan coast and in the cool climate of the Apennines. Hand-picked grapes in boxes, selected on tapes that lead directly, without the use of the pump, into open wooden vats. Pressed in the softest of ways: with the feet, the grapes are accompanied in its process by delicate fulling and sometimes repassing. 10/15 days of maceration are sufficient for a full extraction of quality aromas and tannins. Maturation in French oak barriques, little toasted, 2%, new where it completes malolactic fermentation. Any decanting following the natural rhythms takes place with the help of compressed air without pump. After 12 months the wine is assembled in cement tanks and will stay there for 6 months awaiting bottling. No clarification, no filtration, bottles rinsed with chlorine-free water.
