DESCRIPTION: This grape variety comes from the wine-growing region of south-west France, in particular from the Gironde district called Medoc and seems to have been imported to Friuli in the late 1800s by Senator Pecile and Count Brazza. Hence widespread and throughout Italy.
The grapes that have reached maturity are harvested manually in boxes, and transported to the cellar, where they are de-stemmed, fermented in steel tanks for 15-20 days depending on the vintage. After racking, the wine is stored in cement tanks to better stabilize and clean itself.
After some decanting at the beginning of the new year, it is filtered, bottled and left in the bottle for a few months. The nose reveals refined aromas of berries, spices and leather. The attractive softness, perfect balance and tantalizing persistence provide a unique sensation on the palate.
Ideal with first courses based on meat sauce and second courses with meat. It goes well with not very mature cheeses.
