The barrels are all of fine grain French wood coming from the forests of Allier, Bertranges, Tronçais and Vosges. In general, for each cru, a variety of woods is used to make more aromatic complexity even though, for example, Clos Saint Denis matures particularly well in Bertranges forest wood barrels, while the Nuits St. Georges Perfectly integrates with the Vosges and Center's pièces. The finesse of wood is of fundamental importance, just like roasting, which must be slow and sweet. The percentage of new barrels varies according to the thousandth and in any case the influence of wood on wine must not be overwhelming; Generally the Grand Cru are refined in new barrels for 30-50%, premiers cru for 20-30%, the "village" for 20%. Refineries in barrels last from 15 to 18 months for red cru and 12-15 months for Vougeot 1er cru white and for Corton Charlemagne.
