DESCRIPTION: The harvest takes place in the first half of September, manual with subsequent pressing and 24 hours of cold static sedimentation. Fermentation with selected yeasts and partly Pied de cuve obtained with indigenous yeasts selected from the vineyard. Aging 60% in steel and 40% in Barrique for 7 months and 1 in the bottle.
