DESCRIPTION: Vinification: soft fermentation of the destemmed bunch. Fermentation: spontaneous with pied de cuve. Second Fermentation: in autoclave with rest on the yeasts for 4 months. On the nose, floral notes emerge followed by citrus notes and Mediterranean moss, on the palate, the body is good, supported by a strong acidity that encourages drinking. To be tried in combination with leavened dough desserts, such as panettone, pandoro, or a simple margherita cake.
