6 Valdobbiadene Prosecco Superiore docg - Tittoni

DESCRIPTION: A couple of our steep vineyards of the hills of Vidor, formerly owned by Cavalier Tittoni (illustrious character for our country), we get one of our selections. The calcareous soil, exposure Soliva and old vines are a unique combination that is expressed in spargole grapes, aromatic and sweet. Below is a collection almost late and alcoholic fermentation particularly delicate.  The second fermentation is slow, yeasts slowly evolve a carbon that becomes fragrant and persistent. The color is bright yellow with golden reflections; perlage persistent grain minute. The aroma is complex and velvety; hints of yellow apple little more than sour, yellow plum, white flower bouquet, predominance of white rose, slightly spicy and balsamic. It has an intense flavor of a noble structure reminiscent of the complexity of the aroma, hints of fruit. Ideal with the fillet of sea bream flesh pink grapefruit, sirloin milk, tuna tartar with thyme (thyme oil).
